SERVINGS: 12 muffins |
INGREDIENTS: 1½ cups unbleached white flour 2/3 cup sugar 1½ t baking powder ¼ t salt 1 cup mashed bananas (about 2 large) ½ cup unsalted butter, softened or melted 1 large egg ¼ cup milk ¾ cup semisweet chocolate chips DIRECTIONS: · Pre-heat oven to 350. · Grease muffin tins or use paper baking cups. · Stir together dry ingredients. · In a separate bowl stir together the bananas, butter, egg, and milk. · Add dry ingredients and stir just until combined. · Mix in the chocolate chips. · Scoop the batter into the muffin cups. · Bake until the muffins spring back when lightly pressed. |
