SERVINGS:
12 muffins
INGREDIENTS:
2 cups unbleached white flour
2 t baking powder
½ t salt
1 cup sugar

½ cup salted butter, softened or melted
1 large egg
1 t vanilla extract
½ cup milk or heavy cream

2 cups blueberries
½ cup walnut pieces

DIRECTIONS:
· Pre-heat oven to 350.
· Grease muffin tins or use paper baking cups.
· Stir together dry ingredients.
· In a separate bowl stir together the butter, egg, vanilla, and cream.
· Add dry ingredients and stir just until combined.
· Mix in the fruit and nuts.
· Scoop the batter into the muffin cups.
· Sprinkle sugar over the muffin tops, if desired.
· Bake until the muffins spring back when lightly pressed.

SUGGESTIONS:
Add 1 t grated lemon peel.
