SERVINGS:
24 small biscuits
INGREDIENTS:
4 cups unbleached white flour
8 t baking powder
2 t sugar
1 t salt

1 cup chilled, unsalted butter, cut into 1/8 inch slices

2 cups grated sharp cheddar cheese (about 8 oz)

1¾ cups heavy cream

DIRECTIONS:
    
Pre-heat oven to 425.

Stir together dry ingredients.

Using fingertips, cut butter into dry ingredients.

Stir in cheese.

Stir in cream with a fork.

Turn out onto a lightly floured surface

Form dough and pat or roll out to ¾ inch thickness.

Cut into 2" rounds and transfer to ungreased baking sheets or pans.

Bake until puffed and golden brown.

SUGGESTIONS:
    
Might need more flavor or seasoning? Should sugar be increased to 2 T? Add black pepper? Sprinkle parmesan cheese on top before baking?
