INGREDIENTS:3
cups unbleached white flour
½ cup sugar
4 t baking powder
½ t baking soda
½ t salt
8 T chilled, unsalted butter, cut into 1/8 inch slices
1 cup fresh or frozen cranberries
1 t freshly grated lemon peel
2/3 cup + 1 T heavy cream
1 large egg
1 T unsalted butter, melted
DIRECTIONS:
Pre-heat oven to 375.
Stir together dry ingredients.
Add butter pieces and work in with fingertips until mixture resembles coarse meal.
Stir in cranberries and grated lemon.
Add liquid mixture and stir with fork.
Turn out onto floured work surface and finish forming dough.
Form into a ball and cut into 8 wedges.
Form wedges into balls, transfer to two rectangular glass baking dishes, and flatten
slightly.
Bake until lightly brown and cooked through.
Brush with melted butter.
