INGREDIENTS: 2 T olive oil 3 leeks, thinly sliced 2 medium zucchinis, cut into match stick pieces 1 clove garlic, crushed salt and pepper to taste 5 eggs, lightly beaten 4 T grated Parmesan cheese 4 T grated Swiss cheese DIRECTIONS: Heat 1 T olive oil in a skillet. Cook leaks over low heat, stirring, until slightly softened. Cover and cook leeks for 10 minutes. Add the zucchinis and garlic. Cook for another 10 minutes. Add salt and pepper to taste. Transfer to a bowl. Coat the bottom of a round pie dish with 1 T olive oil. Spread vegetable mixture evenly in pan. Pour eggs over. Sprinkle cheese on top. SUGGESTIONS: |
