SERVINGS:
12 muffins
INGREDIENTS:
2 cups unbleached white flour
¼ t baking soda
½ t salt
¼ cup poppy seeds

¾ cup sugar
½ cup lightly salted butter
2 large eggs
¾ cup sour cream
1 t vanilla extract

DIRECTIONS:
· Pre-heat oven to 350.
· Grease muffin tins or use paper baking cups.
· Stir together dry ingredients.
· In a separate bowl stir together the sugar, butter, eggs, sour cream, and
   vanilla.
· Add dry ingredients and stir just until combined.
· Scoop the batter into the muffin cups.
· Bake until the muffins spring back when lightly pressed.

SUGGESTIONS:
Sugar has been reduced by ¼ cup. Might try adding baking powder.
