SERVINGS:

INGREDIENTS:
3 medium Idaho potatoes, thinly sliced?
2 Granny Smith apples, thinly sliced
1 small onion, thinly sliced into rings

¾ cup half and half, light cream, or heavy cream

1½ cups shredded Cheddar cheese

black pepper
nutmeg


DIRECTIONS:
· Spray a light coating of oil into six ramekins
· Layer potatoes, apples, and onions (sparingly),
      beginning and ending with potatoes.
      Fill ramekins nearly to the top.
· Pour 1/8 to ¼ cup of cream over each.
· Sprinkle about ¼ cup of Cheddar cheese over each.
· Sprinkle black pepper and nutmeg over each.
· Bake at 400 degrees until the tops are golden, about 15-20 minutes.

SUGGESTIONS:
As a variation, try fresh herbs in place of the nutmeg.
