SERVINGS:
4 to 6
INGREDIENTS:
6 eggs
1½ cups milk
½ cup white unbleached flour
¼ t salt
½ t black pepper
5 scallions, thinly sliced
1¼ cups shredded Cheddar cheese

DIRECTIONS:

Pre-heat oven to 350.

Line a 9" x 12" baking dish with aluminum foil and coat generously with nonstick cooking spray.

Whisk together eggs, milk, flour, salt and pepper until smooth (I use an electric mixer).

Stir in scallions.

Pour mixture onto baking sheet.

Bake until set (do not overbake).

Sprinkle evenly with cheese and bake an additional 2 minutes.

Allow to cool for 5 minutes.

Using a spatula, release the edges from the aluminum foil. Using the spatula and foil, roll up jellyroll style.

SUGGESTIONS:
Add finely chopped mushrooms (previously cooked in butter and olive oil) with the scallions.
